Ephemera Negroamaro 2016

A continuing exploration of Victorian vineyards and organic wine.
I'm impressively smooth, poised and easy to drink. I'm a one of a kind Negroamaro, with an unusual palate that is surprisingly similar to Chardonnay. I have a pretty red-fruited and rose nose, and am suuuuuper juicy.
100% Negroamaro sourced from the Chalmers vineyard in Heathcote. Whole bunch pressed directly to aged barrels to ferment on full solids. Natural primary and malolactic fermentation, rested on full lees for 3 months. Prior to bottling the wine is racked once, and sulphur dioxide added, this being the only addition made. No fining or filtration.
