It is the estate's flagship, made only in top vintages, and The Wine Society's buyer rates 2021 as one of the best Naoussa vintages. Xinomavro is a pale, high-acid, high-tannin grape that loves to age.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTaste Profile:\u003c\/strong\u003e Pale in colour with intense black tea, cherry, incense and bramble aromas. The palate is wonderfully concentrated, with powerful but never intrusive tannins, brisk acidity and huge complexity. Jancis Robinson found it heady and voluptuous with a gamey edge, \"grip and precision\", and a very long dry finish. Oak is present but not obvious. About 13.5% ABV.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWinemaking Process:\u003c\/strong\u003e Fermented with native yeasts in stainless steel, then aged in oak for roughly a year. Sources vary on the size of the barrels and the exact time, from 300-litre to 500-litre barrels and 12 to 15 months. The estate is farmed organically and runs 100% on solar energy.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWinemaker:\u003c\/strong\u003e Kostis Dalamara is the sixth generation of a family growing grapes and making wine and tsipouro in Naoussa since 1840.
