Calsac has kept a perpetual reserve for this cuvée since 2011, which makes up around 20–30% of the blend depending on the release. Because it's multi-vintage, the base year, reserve share and dosage change from bottling to bottling.

Taste Profile: Lemon zest, white peach, green apple, pear and acacia blossom, then fresh bread, almond and crushed chalk as it warms. A creamy lees texture rounds out a dry, brisk attack, and the finish is clean and saline. It's light on its feet but can handle raw shellfish, fried seafood and creamy rice.

Winemaking Process: The whole harvest is direct-pressed and only the heart of the press (the cuvée) is kept. Each parcel is vinified separately, with the base wine resting around seven months on its lees, about a quarter of it in neutral 500–600 litre barrels and the rest in stainless steel. It's bottled with a low Extra Brut dosage (roughly 2–5 g/L across recent releases), then aged in bottle before disgorgement.

Winemaker: Étienne Calsac took over his grandparents' roughly three hectares around Avize in 2010 at 26, vineyards that had previously been rented to the grandes maisons. He'd worked vintages at major houses, mostly on the press, and carried those quality controls into his own cellar while moving every parcel to grass cover and organic farming — all of it certified organic since 2021. The rest of his range includes the single-vineyard Les Rocheforts and Clos des Maladries, plus Les Revenants, made from forgotten Champagne grapes.
