Ageing potential: Enjoy now or keep until 2031!
100% Cabernet Sauvignon. The fruit comes from Black Stallion's vineyards in top Napa Valley sub-appellations. Each vineyard lends a range of unique influences, yielding distinctive and dramatically different flavours and structures.
Harvesting and sorting the fruit by hand. After crushing at the winery, micro-lots go through fermentation in small tanks made of wood, concrete or steel. After fermentation, the wine is drained using gravity (not pumps) and ages for 18 months in the finest oak barrels. The gentle handling of the wine prevents the extraction of harsh components that could impart bitterness.
