Adega do Demo San Fiz 2019

Grape Varietals & Region: 100% Treixadura, from Ribeiro, Galicia, Spain. The "San Fiz" farm is located in the parish of Puga in DO Ribeiro, on shale & clay soils

Taste Profile: Rounded & textural, it has aromatic notes of peach & quince, underlying savoury mint & thyme. Fatty & long in the mouth

Winemaking Process: Only 820 bottles produced. Aging in French oak barrels for 10 months. The grapes are gently pressed and a short settling process is carried out. Subsequently, it is fermented in French oak barrels of three wines. At the end of this, a 'batonage' is carried out to increase contact with the lees. Neither filtration nor clarification is carried out.
