Tabalí Pedregoso Gran Reserva Sauvignon Blanc
Crystal clear, yellow-green colour. This fresh Sauvignon Blanc has upfront aromas of citrus and passion fruit, with hints of fresh grass. Full-bodied with a crisp acidity. In the mouth, a subtle minerality intermingles with ripe grapefruit flavours, resulting in a fresh and very elegant wine that closes with a long and fruity finish.
100% Sauvignon Blanc sourced from the Talinay vineyard. Talinay vineyard is located in the Limarí Valley on the indomitable cool coast of northern Chile. The vineyard is situated 12km from the Pacific Ocean and has a constant cool sea breeze. It experiences much lower temperatures than the rest of the valley, making it the vineyard with the coolest climate in the whole of Limarí Valley. The vines are actually planted on an ancient marine terrace that has surfaced. The area has a very porous, fractured limestone soil, which allows roots to easily explore the rock.
Every single task in the vineyard, from pruning to harvesting, is carefully supervised by their viticultural and winemaking team in order to produce the best quality fruit possible. The grapes were hand-harvested into 20kg-bins when this variety reached optimum aromatic and phenolic ripeness. The clusters were later carefully selected, then destemmed and selected one last time. Fermentation took place in small stainless steel tanks at low temperatures (11°C–13°C) in order to retain all the freshness and fruit flavours and aromas in the wine. The wine was finally aged in stainless steel tanks.
