They treated the wine very gently as we wanted the tannins to be expressive yet soft on the palate. It was pumped over once a day and fermented cold to retain aroma and not to be too extractive. The wine was then pressed into four barrels where it matured and softened for 10 months. Its delicate, elegant, perfumed but has beautiful structure and length.
